Which Wacom tablet do you use with Photoshop and are you happy with it? Which is the one to go for?

Medium Intuos Pro.

The large takes up a lot of space, and the small was just too small for me (although would be my second choice).

If it's for retouching, I'd recommend A5 or smaller. Most retouching work involves movements of the hand and wrist only.
I've always used Intuos Tablets.
For an expressive artist wanting to make big gestural marks, a larger tablet might be better.

Has this been discontinued? Out of stock even on Wacom website. In stock on Amazon, but they want £330 for it.

I have a large wacom intuos pro 5 that was gifted to me by a photographer.

I would say they are pretty inconvenient if you have a small desk space, but it's amazingly fluid.

I would get a medium intuos 5/4.

From what I have heard, Huions are cheap knock offs of Wacoms, and pretty much unreliable

I've had large Intuos tablets for over ten years. I don't work with it on the desk, I rest it on my lap. I use dual monitors, PS window on the main screen, and all the windows for layers, history actions and properties on the side screen.

Unless you're considering a Cintiq I would say yes.  Personally, I prefer a separate tablet because that is what I'm used to.  I have the medium and it is mapped across two monitors, but I draw from my wrist so I don't move much.  For an illustrator who draws from the elbow, then a large would be better.
