There's also a 'make mask overlay visible' hotkey. If memory serves, it's option+o on a Mac with older versions of PS. I seem to recall it moving to the backslash though.

Depend on which method of dodge and burn you elected to use. These masks are for dodge and burning with two separate curves layers with a black mask applied. With that in mind you can follow Cole's advice above.
